Extra Vecchio is the very masterpiece of TRUE Balsamic vinegar. This nectar of the gods has been aged for a minimum of 25 years and has been submitted to the Consortium of Modena for blind tasting. Only the very finest is awarded the label Extra Vecchio. It then must be bottled in a special crafted bottle designed by Giugario, a famed Italian automobile and glass artisan. There is no substitution for the real thing! Tradition often holds that a family will save a bottle for the marriage of their daughter or the birth of the first grandchild and serve tastes of it in celebration. It is sometimes sipped as an aperitif/digestif as well. Of course I suggest enjoying more often!

A small vinegar house in the Modena region of Italy crafts this aceto balasamico traditionale under the strict guidelines of the Consortium and time-honored traditions. Only Lambrusco and Trebbiano grape musts are used. The processes of aging in wooden casks and natural evaporation (or as is often said “the angels portion”) combined with exposure to the differing temperatures and humidity of the climates over the years produces a treasure in very limited quantities. This is the masterpiece art of the vinegar house and has won first-place awards in competitions between traditional balsamic DOP vinegar producers of Modena.
Store out of direct sunlight. You may save for years for a special occasion, but why? Enjoy the labor of love which goes into this unique Italian creation. The lingering taste on the palette is the perfect balance of sweetness and acidity.
No recipe needed! Drizzle by drops onto Grana Padano or Parmesan. Drop onto fresh berries. Or as Italians have done for centuries, sip a small bit as a digestif. Create your own special occasion when you enjoy this with family and friends.
