Store chanterelle mushrooms in packaging container or on a clean dish covered with a cotton or paper towel. BRUSH LIGHTLY or blow to remove any traces of its wild heritage. Washing will cause them to immediately soak up the water--avoid the temptation if you can. These have a short shelf (refrigerator) life so ENJOY quickly! Saute gently in butter or good quality oil. They will add a velvety texture and wonderful taste to a myriad of dishes.
It's hard to beat a steak topped with sautéed chanterelles . . . but greens and chanterelles are one of my favorites. Coarsely chop or slice chanterelles. Sauté in butter or good quality oil for a few minutes and then stir in a bunch of fresh chopped mustard or kale. Sauté until greens release their excess water and turn bright green. Season to taste with fresh sea salt and cracked pepper. The delicious flavors are amplified by a drizzle of a good flavorful vinegar like MINUS 8
