IP8 vinegar is a real twist for vinegar and beer lovers! Crafted from India Pale Ale style beer with plenty of flavorful hops to complement the natural hop flavor of the vinegar. The aroma is complex and multifaceted. On the palate, it is richly sweet yet balanced with zinging acidity. This IP8 vinegar is crafted in small batches and is not aged in oak. It is to be enjoyed fresh. There is nothing but beer vinegar and ice wine grape must in this fresh, lively vinegar. The total acidity is 5%. Try it as a finish for grilled meats, as well as my favorite, sprinkled on homemade chips! A whole other level to salt and vinegar chips. You will be delighted with the zing of this unique flavor combination of beer and ice wine vinegar.

Artisan/History/Story

A winemaker in the Niagra region of Canada decided to try crafting a wine vinegar rather than traditional balsamic-style vinegar. Made from sweet Canadian grapes in an honored vineyard The outcome was sweet and dark, like a raisin. The grapes are harvested at “Minus 8” degrees, in the tradition of famed Canadian Ice Wines.
