UNIQUE is the best description for the Lobster mushroom! This wild mushroom is only available for a short time each year in the late summer. As a result, it is highly coveted. The lobster mushroom has a wonderful meaty texture with the color of cooked lobster and a hint of seafood in its’ finish. The firm texture and beautiful color remain after cooking which makes this a great addition to a myriad of dishes. The vibrant red color brightens risotto and pasta beautifully. Try topping a grilled steak with lobster mushrooms for a unique version of “surf and turf.” These treasures from the wild are available only seasonally, as these mushrooms do not take well to cultivation.

Store unwashed in packaging container or on a clean pan covered with a cotton or paper towel. This will help prolong freshness. BRUSH LIGHTLY to remove any traces of its wild heritage. If necessary wash VERY quickly in COLD water just before use.
After cleaning, slice into hearty pieces and sauté over medium heat. These are a hearty, wild mushroom that does not "seep" a lot of water. Season with quality sea salt and pepper as they sauté. They will soften and develop flavor (read: not a variety to slice raw into a salad). These are perfect to toss into some seafood pasta to give a real punch of color and flavor. Excellent with pasta or grain dishes or to top your favorite steak for a twist on Surf and Turf!
