Fresh maitake mushrooms are commonly called the “Hen of the Woods” mushroom as their appearance resembles feathers. The taste is sure to be a favorite in your house. They have an excellent texture with a true mushroom flavor which complements chicken perfectly and just about everything else. These are an excellent choice if you are new to gourmet mushrooms. I’ve never served them to someone who didn’t like them! This cultivated variety is of the highest quality and available year-round. Sauté, fry in tempura, roast wth root vegetables, the options are wonderful.

Store unwashed in refrigerator either in the packaging or on clean dish covered with a kitchen towel. BRUSH LIGHTLY to remove any traces of dirt. If necessary wash VERY quickly in COLD water just before use. Should keep for a week. However, it is unlikely they will not be eaten before then!!!
After cleaning, pull apart or gently slice, then sauté with butter or good quality olive oil and some good sea salt. Cook until tender. They will soften up and get yummy brown edges. However they will not turn to mush and disappear in a pool of evaporating water like your store bought button variety! Grill or pan sear skinless, boneless chicken breast over medium hot heat. Top cooked breasts with mushrooms and then if you want a special treat . . . drizzle each mushroom-topped breast with some Vigno Oro balsamic vinegar. Don't substitute the stuff in the grocery store here! If you don't have any GOOD balsamic then simply grind on some pepper and enjoy!
