Prepare basic farro and lentil pilaf . Click to get short cut to recipe. (This is a perfect way to use up any extra) Slice top of peppers off and scoop out seeds and membrane. Mix pilaf with kalamata olives and add vinegar. Toss to combine then stuff inside peppers. Top with mozzarella slices or pieces and bake in 350 degree oven for about 15 minutes. I like the peppers to just get a bit tender (but not mushy) and the cheese to melt.
Remove from oven and serve with a poached egg on top if you like! ( a little spoonful of pesto is also good)
