Zucchini is plentiful in the summer and this is a wonder light and fresh preparation. Wash zucchini and julienne slice. ( use a mandolin fitted with a julienne blade or there are now several hand held gadgets which will do the trick) Saute for just a minute to release some of the water. remove from sauté pan with a slotted spoon or tongs to drain away excess moisture. Place in serving bowl and toss with “O” meyer lemon olive oil and lemon zest ( optional). Sprinkle with fleur de sel and serve. This can also be chilled and served as a salad.
