You can also do this ‘de- constructed’ with a mound of the cheese balls, grape tomatoes, olives( if desired) all scattered on a platter with toothpicks for picking what you like.
Take the mini mozzarella ‘pearls’. If you can’t find these get the smallest fresh mozzarella balls you can. You may want to cut them in half. The idea is Bite Size. The same goes for the tomatoes if they are too large for a comfortable bite. (No one wants to be hit with flying tomato seeds.) Toss them with pesto sauce with truffle. ( you can use the red variety as well) Let them marinate in the sauce for a bit ( not necessary but will improve as they sit) Thread one tomato, one basil leaf and one mozzarella pearl on to cocktail picks. Arrange on platter and serve your guests. Goes beautifully with a charcuterie board.
The best part is any leftovers can go into a terrific salad or pasta!
