Pre heat oven to 400 degrees. Cut fresh potatoes in nice thick wedges. Alternatively, use fingerling potatoes and leave whole- cut in half in larger. (although not traditional they are well suited and get nice and crispy) Toss potatoes in good quality olive oil , sprinkle with sea salt and cracked pepper. Roast in oven for 20 minutes ( or until tender when pricked with a fork) Remove from oven and sprinkle with Selzione Black truffle salt. Then, watch them disappear….
